How to Make It
To make the perfect cup, you will need water, sugar (optional), and high-quality finely pulverized coffee.
Measure: Add cold water to your briki using your small demitasse cup to measure.
Add Coffee and Sugar:
Add one rounded teaspoon of coffee powder and your desired amount of sugar per cup.
Stir & Heat: Stir the mixture well while the water is cold to ensure everything is dissolved.
Heat the briki on low heat.
The Rise: Wait for the coffee to slowly come to a boil. As the thick foam rises to the top, quickly remove it from the heat so it doesn't overflow.
Serve: Pour slowly into your cup, making sure to distribute the foam evenly among cups. Allow the sediment to settle for a minute before sipping.
Styles of Sweetness Greek coffee is never stirred once poured, as this disturbs the grounds. It is tailored to your taste by the amount of sugar added during the brewing process:
Sketos: Unsweetened, black, and robust.
Metrios: Semi-sweet, featuring about one teaspoon of sugar.
Glykos: Sweet, utilizing two teaspoons of sugar.
Variglykos: Extra sweet and extra strong.
